- 1 large English cucumber Peeled and small-diced
- 3 tbsp extra virgin olive oil Divided for mixing and garnishing

Place the diced English cucumber in a fine-mesh strainer, toss with half the sea salt, and let it drain over a bowl for 15 minutes.
