- 16 oz whipped topping thawed and chilled
- 22 oz mandarin orange segments two 11 oz cans, drained thoroughly
- 20 oz crushed pineapple bits one can, pressed dry
- 2 cups mini white marshmallows fresh and pillowy
- 1 cup shredded sweetened coconut thin strands
- 12 maraschino cherries stems attached, patted dry
- 1/2 tsp pure vanilla extract for aromatic depth
- 1/8 tsp fine sea salt to brighten fruit flavors
Drain the mandarin oranges and crushed pineapple separately, press the pineapple gently, and blot away visible surface moisture.
Fold the vanilla extract and fine sea salt into the chilled whipped topping in a large mixing bowl.
Add the pineapple, then gently fold in the mandarin orange segments so most pieces remain intact.
Fold in the mini marshmallows and shredded coconut just until evenly distributed without overmixing.
Cover and refrigerate for at least 2 hours, then garnish with the patted-dry maraschino cherries before serving.
Storage: Refrigerate in an airtight container for up to 3 days and keep at 40°F / 4°C or below.
Reheating: Do not reheat; serve the fruit salad thoroughly chilled.
Best Tips: Drain and blot the canned fruit well, then fold gently to protect the fluffy texture.
Variations: Add toasted pecans, halved grapes, or replace part of the whipped topping with vanilla Greek yogurt.
Make Ahead: Prepare up to 1 day in advance and add the cherries shortly before serving.
