Ingredients
  

  • 2 slices Thick-cut Sourdough Bread Approx 3/4 inch thick
  • 1/2 lb 80/20 Ground Beef Crumbled and seared
  • 1 cup Sharp Orange Cheddar Cheese Thick slices or freshly grated
  • 2 tbsp Unsalted Butter Room temperature
  • 1 tbsp Neutral Searing Oil Avocado or Grapeseed oil
  • 1/2 tsp Coarse Sea Salt Visible grains
  • 1/2 tsp Cracked Black Pepper Freshly cracked

Instructions
 

  • Heat the neutral oil in a heavy skillet over medium-high heat. Add the ground beef in an even layer and let it cook undisturbed for 1 minute to develop a crust. Sprinkle with coarse sea salt and cracked black pepper, then break the beef into small crumbles with a spatula. Continue cooking, stirring occasionally, until the beef is fully browned and crispy in spots, about 5-7 minutes. Transfer the beef to a plate and wipe out the skillet.
  • Spread 1 tablespoon of room-temperature butter evenly over one side of each sourdough slice, making sure to reach the edges.
  • Place one slice of bread, buttered side down, in the skillet. Top with half of the shredded cheddar, then all of the seared ground beef, spreading it evenly. Add the remaining cheddar on top of the beef, then place the second slice of bread on top, buttered side up.
  • Turn the heat to medium-low and cook the sandwich for 3-4 minutes, until the bottom is deep golden brown and crispy. Press down gently with a spatula to help the cheese start melting and the filling stick together.
  • Carefully flip the sandwich with a spatula. Cover the skillet with a lid or a piece of foil and cook for another 3-4 minutes, until the second side is golden brown and the cheese is fully melted. If the bread is browning too fast, lower the heat slightly.
  • Transfer the melt to a cutting board and let it rest for 1 minute so the cheese sets slightly and does not spill out. Slice in half diagonally and serve hot.

Notes

Storage: Store any leftover melt in an airtight container in the fridge for up to 2 days. Reheat in a dry skillet over medium-low heat for 2-3 minutes per side, covered, until hot and the cheese is melted again. Avoid the microwave, which makes the bread soggy.
Reheating: For the crispiest results, reheat in a skillet as described above. If the bread has softened, a quick toast in a hot, dry pan before reheating can help restore crunch.
Best Tips: Use room-temperature butter for even spreading. Sear the beef in a single layer without moving it for the first minute to build a deep, savory crust. Press the sandwich gently while cooking to help the cheese melt into the beef. Let the melt rest for 1 minute before slicing so the cheese sets slightly.
Variations: Swap the cheddar for smoked gouda, pepper jack, or provolone. Add caramelized onions, pickled jalapeƱos, or a dash of hot sauce. Use a sturdy country white or ciabatta instead of sourdough. For a double-meat version, use a full pound of ground beef and a larger skillet.
