- 1.5 cups jasmine rice rinsed thoroughly
- 1 can full-fat coconut milk 400ml
- 1.5 cups fresh pineapple chunks
- 0.5 cup red bell pepper finely diced
- 2 tbsp coconut oil
- 1 cup water or vegetable broth
- 1 tsp sea salt
- 0.5 cup fresh cilantro chopped
- 3 stalks scallions thinly sliced
Heat coconut oil in a wide skillet over medium heat. Add diced red bell pepper and sauté for 2-3 minutes until softened.
Add rinsed jasmine rice and stir constantly for 1 minute until grains are coated and fragrant.
Pour in coconut milk, water or broth, and sea salt. Stir, then bring to a gentle boil over medium-high heat.
Reduce heat to low, cover with a tight-fitting lid, and simmer for 15-18 minutes without lifting the lid.
Remove from heat and let rest, covered, for 5 minutes. Uncover and fluff rice with a fork.
Gently fold in pineapple chunks, most of the scallions, and half the cilantro until evenly distributed.
Transfer to a serving bowl, garnish with remaining scallions and cilantro, and serve warm.
Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Cool to room temperature within 2 hours before refrigerating.
Reheating: Reheat gently in a skillet over medium-low heat with a splash of water or coconut milk, or microwave covered with a damp paper towel. Ensure it reaches 165°F (74°C).
Best Tips: Rinse rice until water runs clear for fluffy grains. Use fresh pineapple for best texture and flavor. Avoid lifting the lid during simmering to ensure even cooking.
