Instructions

  • Warm over medium heat, stirring only until the sugar dissolves and the syrup looks clear and evenly pink.
  • Stop stirring and boil the syrup until it reaches 300°F / 149°C on a candy thermometer.
  • Remove the pan from the heat and let the bubbles settle for 45 to 60 seconds.
  • Dip a whisk or fork into the syrup and flick it back and forth over the spoon handles to form fine sugar strands.
  • Gather the strands into loose bundles or paper cones and serve right away for the best texture.

Storage: Cotton candy is best served within 30 to 60 minutes because the strands absorb moisture quickly.
Reheating: Finished cotton candy should not be reheated; gently rewarm only the remaining syrup if it thickens before spinning.
