- 1 can black-eyed peas rinsed and drained
- 1 can black beans rinsed and drained
- 1.5 cups sweet corn kernels fresh, canned, or thawed
- 1 cup red bell pepper finely diced
- 1 cup green bell pepper finely diced
- 1/2 cup red onion finely diced
- 1 large ripe avocado cubed
- 1/2 cup fresh cilantro roughly chopped
- 1/4 cup lime juice freshly squeezed
- 1/3 cup extra virgin olive oil
- 1 tsp honey or agave
- 1 bag salted corn tortilla chips for serving
Rinse and drain the black-eyed peas, black beans, and corn. Finely dice the red and green bell peppers and red onion. Roughly chop the cilantro. Cube the avocado last.
In a small bowl or jar, whisk together the lime juice, olive oil, and honey until emulsified. Season with a pinch of salt and pepper.
In a large mixing bowl, gently toss the black-eyed peas, black beans, corn, bell peppers, red onion, and cilantro until evenly distributed.
Pour the dressing over the bean mixture and stir gently to coat. Cover and refrigerate for at least 20 minutes to let the flavors come together.
Just before serving, fold in the cubed avocado. Taste and adjust salt or lime juice if needed. Serve with tortilla chips.
Storage: Store leftovers in an airtight container in the fridge for up to 3 days. The avocado may brown over time but is still safe to eat.
