- 1 cup cottage cheese full-fat, 4% milkfat
- 1 tsp dried oregano fine flakes
- 1/2 tsp black pepper freshly cracked
- 1/4 tsp sea salt fine grain
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a bowl, mix cottage cheese, oregano, black pepper, and sea salt until well combined.
Drop tablespoon-sized mounds of the mixture onto the prepared baking sheet, spacing them 2 inches apart.
Use the back of a spoon to flatten each mound into a thin, even round about 2-3 inches wide.
Bake for 25-30 minutes, rotating the pan halfway, until edges are deeply golden and centers are firm.
Let chips cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely and crisp up.
Storage: Store completely cooled chips in an airtight container at room temperature for up to 3 days. Re-crisp in a 350°F oven if needed.
Reheating: To restore crispness, bake at 350°F for 3-5 minutes. Avoid the microwave.
Best Tips: Use full-fat cottage cheese for the best crunch. Spread the rounds very thin and even for uniform baking.
