- 0.5 cup red bell pepper finely diced
- 0.25 cup red onion minced
- 3 large hard-boiled eggs yolks crumbled, whites diced
- 2 tbsp fresh parsley chopped for garnish
Cook the elbow macaroni in a large pot of salted boiling water until tender. Drain, rinse with cold water, and let drain thoroughly.
