- 2 lbs Chicken Breast cut into 1-inch cubes
- 2 tbsp Avocado Oil
- 1 tsp Kosher Salt
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Cracked Black Pepper
- 1/2 cup Greek Yogurt or Mayonnaise
- 3 cloves Garlic grated
- 1 tbsp Lemon Juice
- 1/4 cup Fresh Parsley finely minced
In a large bowl, toss chicken cubes with avocado oil, kosher salt, garlic powder, onion powder, and black pepper until evenly coated.
In a small bowl, stir together Greek yogurt (or mayo), grated garlic, lemon juice, and minced parsley. Season with a pinch of salt and pepper. Cover and refrigerate.
Preheat grill or grill pan to medium-high heat (about 400°F). Thread chicken onto skewers if desired, or place directly on a grill basket.
Grill chicken for 3-4 minutes per side, turning once, until golden brown with light char marks and internal temperature reaches 165°F.
Transfer chicken to a plate and let rest for 2-3 minutes. Serve warm with the chilled garlic sauce.
Storage: Store cooled chicken in an airtight container for up to 4 days. Keep sauce separate for up to 3 days.
