Ingredients
  

  • 1 lb chicken breast boneless, skinless, diced into 3/4 inch cubes
  • 1/4 cup honey 60ml
  • 3 tbsp lime juice 45ml, freshly squeezed
  • 1 tbsp olive oil 15ml, for searing
  • 1.5 cups long-grain white rice 285g
  • 1/4 cup fresh cilantro 10g, finely chopped
  • 1 tsp lime zest from one large lime
  • 2 large ripe avocados approx 400g
  • 1/2 tsp red chili flakes for garnish

Instructions
 

  • Cook the rice according to package directions. Once cooked, fluff with a fork and stir in the chopped cilantro and lime zest. Cover and keep warm.
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken in a single layer and cook for 4-5 minutes without moving, until golden on the bottom. Stir and continue cooking for another 3-4 minutes until cooked through.
  • In a small bowl, whisk together the honey and lime juice. Pour the mixture over the chicken in the skillet. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the chicken. Remove from heat.
  • Halve, pit, and slice the avocados. Fan the slices slightly so they’re easy to layer.
  • Divide the cilantro lime rice among plates, pressing it gently into a mound. Top with the glazed chicken, then arrange the avocado slices on top. Sprinkle with red chili flakes and serve immediately.

Notes

Storage: Store the chicken, rice, and avocado in separate airtight containers. The avocado will brown, so it’s best to slice fresh avocado for leftovers. Chicken and rice last 3-4 days in the fridge.
Reheating: Warm the chicken in a skillet over medium-low heat with a teaspoon of water to loosen the glaze. Microwave the rice covered with a damp paper towel.
Best Tips: Pat the chicken dry before searing for a golden crust. Use fresh lime juice for the brightest flavor. Slice avocado just before serving to prevent browning.
Variations: Swap chicken for shrimp or thighs. Use brown rice or quinoa. Add black beans to the rice for extra fiber. Replace lime with lemon for a different citrus note.
