- 1 loaf Artisan Baguette cut into 1/2-inch diagonal slices
- 8 pieces Roma Tomatoes approx 500g, seeded and finely diced
- 1 bunch Fresh Green Basil approx 30g, cut into thin ribbons
- 4 cloves Garlic minced into translucent bits
- 1/4 cup Extra Virgin Olive Oil 60ml, divided use
- 2 tbsp Balsamic Glaze 30ml, for zigzag drizzle
- 1 tsp Coarse Sea Salt 6g, to taste
- 1/2 tsp Cracked Black Pepper 2g, to taste
Halve the Roma tomatoes, scoop out the seeds with a spoon, and dice them into small, even pieces. Place in a medium bowl.
Add the minced garlic, basil ribbons, 2 tablespoons of olive oil, salt, and pepper to the tomatoes. Stir gently to combine. Let it sit for 10 minutes to meld the flavors.
Preheat your oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush both sides lightly with the remaining olive oil, and toast for 5-7 minutes until golden and crisp, flipping halfway.
Spoon the tomato mixture generously onto each toasted slice. Drizzle with balsamic glaze in a zigzag pattern and serve immediately.
Storage: Store leftover tomato mixture in an airtight container in the fridge for up to 2 days. The bread is best fresh; re-crisp in a 350°F oven for 2-3 minutes if needed.
