- 1/2 cup sun-dried tomatoes oil-packed, sliced into strips
- 2 tablespoons sun-dried tomato oil from the jar
- 4 cloves garlic minced
- 2 cups fresh baby spinach washed
- 1/2 cup parmesan cheese finely grated
- 1/2 teaspoon red pepper flakes adjust for heat
- 1/2 teaspoon cracked black pepper coarse
- 1/4 cup fresh basil sprigs for garnish
Drain and rinse the cannellini beans, pat them dry, slice the sun-dried tomatoes, mince the garlic, grate the parmesan, and dry the spinach.
