Ingredients
  

  • 2 lbs chicken breasts pounded even
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 tbsp dried oregano
  • 4 cloves garlic minced
  • 1/2 cup fresh parsley finely chopped
  • 2 whole lemons halved for charring

Instructions
 

  • In a medium bowl, whisk together olive oil, lemon juice, dried oregano, and minced garlic.
  • Place pounded chicken breasts in a shallow dish or zip-top bag. Pour marinade over chicken, turn to coat, and let sit at room temperature for 30 minutes, flipping once.
  • Preheat grill or grill pan to medium-high heat. Remove chicken from marinade, pat dry, and grill for 5-6 minutes per side until internal temperature reaches 165°F.
  • While chicken rests, place lemon halves cut-side down on the grill. Cook for 2-3 minutes until charred and softened.
  • Let chicken rest for 5 minutes, then slice against the grain. Sprinkle with fresh parsley and serve with charred lemon halves.

Storage: Refrigerate leftovers in an airtight container for up to 4 days. Freeze wrapped chicken for up to 3 months; thaw overnight in the fridge.
