- 1 lb gold baby potatoes halved
- 12 oz fresh green beans trimmed
- 1 cup shredded parmesan cheese freshly shredded preferred
- 3 tbsp extra virgin olive oil divided
- 1 tsp dried oregano
- 1 tsp dried parsley
- 0.5 tsp garlic powder
Preheat the oven to 425°F / 220°C and line a large rimmed sheet pan with parchment paper.
Toss the halved potatoes with part of the olive oil, oregano, parsley, and garlic powder, then spread them cut-side down.
Rub the chicken breasts with olive oil and the remaining herb mixture, then place them on the pan with space around each piece.
Roast for about 18 minutes so the potatoes begin to soften and the chicken starts cooking through.
Toss the green beans with the remaining olive oil, add them to the pan, and sprinkle parmesan over the chicken and vegetables.
Continue roasting until the chicken reaches 165°F / 74°C, the potatoes are tender, and the parmesan is melted with golden spots.
Rest the chicken for 5 minutes, slice it, and serve with the roasted potatoes, green beans, and browned parmesan bits.
