Ingredients
  

  • 1 cup unsalted butter, cold and cubed 227g
  • 2 cups all-purpose flour 250g
  • 1/2 cup granulated sugar 100g
  • 1/2 tsp sea salt 3g
  • 4 cups fresh peaches, sliced 1/4 inch thick 680g
  • 2 tbsp cornstarch 16g
  • 1 tbsp lemon juice 15ml
  • 1 cup old fashioned oats 90g
  • 1/2 cup light brown sugar 100g
  • 1/4 cup honey, for drizzling 85g

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
  • In a food processor, pulse flour, granulated sugar, and salt until combined. Add cold cubed butter and pulse until mixture resembles coarse sand and holds together when pressed. Reserve 1 cup of this mixture for topping.
  • Press remaining crust mixture firmly into prepared pan. Bake for 15 minutes until edges are lightly golden.
  • While crust bakes, toss sliced peaches with cornstarch and lemon juice in a bowl.
  • In the same bowl, combine reserved 1 cup crust mixture with oats and brown sugar. Mix with fingers until clumps form.
  • Spread peach filling over warm crust. Sprinkle oat topping evenly over peaches, pressing lightly.
  • Bake for 35-40 minutes until topping is golden brown and filling bubbles at edges.
  • Remove from oven and immediately drizzle honey over hot bars. Cool in pan on wire rack for 1 hour, then refrigerate for at least 1 hour before slicing.

Notes

Storage: Store bars in an airtight container in the refrigerator for up to 5 days. For longer storage, wrap individually and freeze for up to 3 months.
Reheating: Warm individual bars in a 300°F oven for 5-7 minutes to re-crisp the topping. Avoid the microwave.
Best Tips: Use ripe but firm peaches to prevent a soggy crust. Chilling the bars thoroughly ensures clean slices.
Variations: Swap peaches for nectarines or berries. Add 1/4 cup chopped nuts to the topping for extra crunch.
