- 1.5 lbs Italian sausage links Sliced into 1/2-inch rounds
- 1 large red bell pepper Sliced into 1/2-inch strips
- 1 large yellow bell pepper Sliced into 1/2-inch strips
- 1 large green bell pepper Sliced into 1/2-inch strips
- 1 large white onion Cut into 1/2-inch wedges
- 3 tbsp extra virgin olive oil Divided
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/4 cup fresh parsley Finely chopped for garnish
Slice the sausage into 1/2-inch rounds, cut the peppers into 1/2-inch strips, cut the onion into wedges, and finely chop the parsley.
Heat 1 tablespoon olive oil in a 12-inch skillet over medium-high heat. Brown the sausage in a single layer for 6 to 8 minutes, turning as needed, then transfer it to a plate.
Add the remaining 2 tablespoons olive oil, the peppers, and the onion. Cook for 8 to 10 minutes, stirring occasionally, until the vegetables begin to soften and brown.
Sprinkle in the oregano and basil. Return the sausage to the skillet and cook for 4 to 6 minutes, stirring, until the vegetables are tender-crisp and the sausage is fully cooked.
Remove the skillet from the heat, fold in most of the parsley, garnish with the remainder, and serve warm.
Storage: Refrigerate cooled leftovers in an airtight container for 3 to 4 days, or freeze for up to 2 months.
Reheating: Warm gently in a covered skillet with a splash of water until the sausage reaches 165°F / 74°C.
Best Tips: Brown the sausage without crowding, cut the vegetables evenly, and remove excess rendered fat before sautéing the peppers and onion.
Variations: Use hot Italian sausage, chicken sausage, yellow or red onion, or add a modest amount of mushrooms or zucchini.
