- 3 tbsp honey
- 1 tsp vanilla extract
- 3 drops gel food coloring pink, turquoise, and purple
- 2 tbsp rainbow nonpareil sprinkles
- 1 tbsp white star candy sprinkles
In a large bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and well combined.
Divide the yogurt mixture evenly into three smaller bowls. Add one drop of pink gel food coloring to the first bowl, one drop of turquoise to the second, and one drop of purple to the third. Stir each until the color is uniform, adding more coloring a tiny bit at a time if you want deeper shades.
Dollop spoonfuls of the colored yogurt randomly onto a parchment-lined rimmed baking sheet. Use a spatula or the back of a spoon to spread the yogurt into an even layer about ¼-inch thick, gently swirling the colors together as you spread. Don’t overmix—you want distinct ribbons.
Scatter the rainbow nonpareil sprinkles and white star sprinkles evenly over the top, pressing them very lightly so they stick.
Place the baking sheet flat in the freezer and freeze for at least 4 hours, or overnight until completely firm.
Once frozen solid, lift the bark out using the parchment paper and break it into irregular pieces. Serve immediately or store in the freezer.
Storage: Keep the bark in an airtight container with parchment between layers in the freezer for up to 2 weeks. Press plastic wrap directly on the surface to prevent freezer burn.
